Try this recipe for homemade mac & cheese and your family will love you. Just add a pork roast cooked in the crockpot and you are done!
Chicken Enchilada Casserole
Mix all ingredients in casserole dish. Top with grated cheese and bake 20 minutes on 350.
2 cups cooked chicken-chopped
7 oz tortilla chips-crushed
1 can cream of mushroom soup
1 can cream of chicken soup
8 oz sour cream
If you like, you can add:
onions
black olives
jalapenos
or top with guac when it’s done ![]()
Start this one right after breakfast and supper will be ready when you are ready to eat.
When you homeschool and keep up with your home, it is sometimes hard to keep up with cooking. For some reason, my family still wants 3 meals a day

Shepherds Pie with Garlic Mashed Potatoes
I probably finished this meal in 30 minutes…and it had ground beef that all my kids loved!
A few changes I made so everyone would love it.
1. Changed horseradish to garlic
2. I omitted the egg in the potatoes
3. Substituted celery for parnsips. I didn’t have any parsnips & my kids will eat celery.
